Overlooking the Mediterranean, the Phoenicia InterContinental hotel with 446 rooms and suites and 33 apartments, along with 4 F&B outlets, and one of the largest banquet facilities in Lebanon, will reopen its doors after two years to embrace the community where it operates with the outstanding luxury it represents.
As Executive Chef you will be responsible for: • Managing all functions of the food production to achieve optimum quality level of sanitation • Overseeing special events and food promotions • Developing and writing standard recipes • Developing new dishes and products • Maintaining comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trends and making appropriate adjustments to the Kitchen operations accordingly • Planning and organizing with the Food and Beverage Manager successful activities and overseeing pricing and preparation of menus • Controlling and analyzing on an on-going basis the level of the following: sales, costs, issuing of food, quality and presentation of food products, condition and cleanliness of facilities and equipment • Conducting such functions as interviewing, hiring, performance evaluation, coaching, counseling and taking disciplinary actions to ensure the appropriate productivity and efficiency of the Kitchen team • Developing with the Training Manager training plans and material in accordance with IHG and local Hotel guidelines and implements them for the Food Production colleagues and other Food and Beverage colleagues • Maintaining updated and accurate costing of all dishes prepared and sold in the Food and Beverage operation • Setting Food Production and Stewarding goals and developing strategies, procedures and policies • Monitoring local competitors and comparing their operation with the Hotel Food and Beverage operation
Ideally, you will have some or all of the following competencies and experience we are looking for: • Vocational Degree in Culinary Arts • Minimum of 8 years experience, with experience in similar roles at a luxury full-service five-star hotel • Effective verbal and written communication skills in local and English language • Ability to lead and develop a team, and embed a goal oriented work environment • Exceptional motivational style, should be able to keep everyone working at a fast and efficient pace
